Introduction:

Ingredients For Prawn Crackers:

  1. Prawn[peeled and deveined] 1/2 kg
  2. Water 1/2 cup
  3. Salt 2 teaspoons
  4. White fined ground pepper 1/2 teaspoon
  5. Oil 1 & 1/2 teaspoon
  6. Tapioca starch 2 & 1/2 cups
  7. Oil for deep frying
  8. Water for boiling

Instructions:

  1. To make prawn crackers, Place prawns, water, salt, white pepper, and oil in a blender or food processer and blend it together until it forms a thick paste.
  2. Transfer it to a large bowl.
  3. Add the tapioca starch and mix to form a dough, it should not be too soft or sticky.
  4. You may have to add more water or tapioca starch.
  5. Knead several times until it becomes smooth.
  6. Roll the dough into a log, about 4 cm in diameter.
  7. Divide into 2 logs and roll to smoothen again.
  8. Bring a pot of water to a boil over medium heat.
  9. Unwrap the dough and cook for 20-30 minutes turning it from time to time.
  10. Transfer to a plate lined with parchment paper or greased lightly with oil and let it cool down completely.
  11. Refrigerate overnight to dry out for easy slicing.
  12. Using a Mandolin slicer, cut the dough into thin round slices.
  13. Place the slices on a rack and sundry for 6-12 hours or until totally dried out.
  14. You can also use your oven set to the lowest temperature or a food dehydrator.
  15. Heat about 2-3 inches of oil and fry the dried dough slices in hot oil for a few seco9nds after they float and remove from oil using a spider ladle.
  16. Transfer to a colander to remove excess oil.
  17. Sprinkle some salt if needed and serve.
