  2. Sliced Onion 2.
  3. Red bell pepper sliced-2.
  4. Green bell pepper sliced-1.
  5. Salt 1 & 1/2 teaspoon.

  7. Chilly powder 1 teaspoon.
  8. Shrimp uncooked, peeled and deveined 1 pound.
  9. Lime juice(1 lime).
  10. Vegetable oil 1 teaspoon.
  11. 8 large flour tortillas.
  12. 4 cups shredded Mexican cheese blend, divided.

Directions for preparation:

Step 1:

Heat 2 tablespoon oil in a large skillet over medium high heat. Add onion and bell peppers cook, stirring frequently, until onion is translucent and peppers are soft, 8-10 minutes, add salt, cumin and chilly powder, stir to coat vegetables.

Step 2:

Add shrimp; cook and stir until shrimp are opaque and no longer pink in the center, 5-6 minutes. Remove from the heat and stir in minced jalapeno and lime juice.

Step 3:

Heat another skillet over medium heat and brush with about 1 teaspoon vegetable oil. Place 1 tortilla in the hot skillet spoon about 1/6 of the shrimp filling and 1/2 cup Mexican cheese blend on to one side of tortilla. Fold tortilla in half. Cook until lightly lightly brown, about 5-6 minutes. Flip and cook until lightly brown on the other side, 4-5 minutes. Repeat to make remaining quesadillas.


If you are starting with frozen raw shrimp, put them in a bowl of ice water to defrost. If you are starting with cooked shrimp, just toss them with some salt, pepper, chilly powder and lime juice and let them sit while you heat the tortillas.
