How to make delicious mutton gravy at home:

The Dhaba style Mutton gravy is a delicious flavorful Indian curried dish made of soft tender chunks of Mutton in a spicy onion and tomato gravy and it is cooked in a rich and aromatic sauce. It is popular dish prepared in many cuisines all around the world including India, Middle-Eastern and Mediterranean. Mutton gravy is a pot dish where the mutton is marinated and cooked with plenty of spices, herbs, onions, tomatoes and yoghurt. If steadily cooked the mutton becomes more tender than the normally cooked mutton. Indian cuisine is diverse and every dish is made in many ways. Now let us look further how the mutton gravy is made.


[For Marination]:

  1. Boneless mutton or bone in mutton[500g].
  2. Curd/yoghurt 3 tablespoon.
  3. Ginger garlic paste 2 teaspoon.
  4. Salt 1 teaspoon.
  5. Turmeric powder 1/2 teaspoon.
  6. Red chilly powder 1 teaspoon.

[For Mutton gravy]:

  1. Oil 3 tablespoon.
  2. Cardamom 2.
  3. Cinnamon 2 inch.
  4. Finely chopped onions 2 cups.
  5. Tomato puree 1/2 cup.
  6. Grated coconut 4-5 tablespoon.
  7. Green chilly slit or chopped 3.
  8. Mutton masala 3 teaspoon.
  9. Water 1 cup or as required.
  10. Salt as required.
  11. Curry leaves 2 springs.
  12. Bay leaf 1.
  13. Coriander leaves finely chopped for garnishing-5 table spoon.


[Marinating the Mutton]:

  1. Add mutton to a bowl and marinate it with ginger garlic paste, turmeric powder, yoghurt, chilly powder and salt.
  2. Refrigerate and marinate the mutton for at least 5 hours to get soft and tender meat.

[Paste for the gravy]:

  1. Take 4 large onions and chop them.
  2. Now take a bottom large pan and add 2 teaspoons of oil and stir fry the chopped onions at medium flame for about 5 minutes.
  3. Fry until the chopped onions turn golden brown in color.
  4. Now transfer the fried onions into a paper towel and let it cool for about 3 minutes.
  5. Slit the green chilly and wash some curry leaves and set it aside.
  6. If you prefer to use coconut roast 4-5 tablespoon of grated coconut on low flame.
  7. When it turns aromatic turn of the flame and keep it aside to let it cool down.
  8. Now add the fried onions, green chilly, tomato puree, and grated coconut into a blender.
  9. Blend this into a fine paste by adding little water.

[For Mutton Masala]:

  1. Heat a heavy bottom pot with oil.
  2. Now add cinnamon, cardamom and cumin.
  3. Now add the paste made earlier and sauté them evenly until golden brown.
  4. Now add garam masala powder, turmeric powder, red chilly powder and mix them well.
  5. Add the marinated mutton.
  6. Sauté for about 5-6 minutes.
  7. Cover and cook for another 10 minutes.
  8. Add 1/2 cup water.
  9. Keep stirring occasionally.
  10. Add salt if required
  11. You will see that meat will begin to release moisture.
  12. Now add some curry leaves and sauté them for another 2 more minutes.
  13. You will see that the oil begins to separate.
  14. Now you can add fresh yoghurt if required[Do not use sour curd].
  15. Sauté for another 5-6 minutes.
  16. Pour water and stir well.
  17. Cook until the meat becomes tender.
